Freezing New Zealand Spinach
1. Pick a big bowl of spinach.
"Big bowl, maybe," says Virginia, "but not a big bowl of spinach."
She can be so critical. It was a big bowl of spinach until I emptied half of it.
2. Heat olive oil in a saucepan and toss in the spinach.
3. Cook and stir constantly.
4. Cook down to dark green, then cool in a colander.
5. Stuff in a plastic bag or box and freeze.
